Meatballs 2 Ways
  • INGREDIENTS
    Italian Style
    1lb Ground Chicken
    As needed salt
    As needed black pepper
    3 cups panko
    3 cups all-purpose flour
    5 large eggs
    3 tablespoon dried oregano
    1 tablespoon garlic powder or granules
    1 cup shredded mozzarella cheese
    1 can marinara sauce (for dipping)
    Canola Oil for Frying

    Hot Nashville Style
    1 lb Ground Chicken
    As needed salt
    As needed black pepper
    4 cups all-purpose flour
    2 cups buttermilk
    2 large eggs
    3 tablespoons tabasco
    6 tablespoons cayenne pepper
    1 tablespoon paprika
    ½ tablespoon cumin
    1 tablespoon light brown sugar
    ½ tablespoon garlic granules
    ½ cup canola oil + more for frying
    A few sliced pickles

    INSTRUCTIONS
    Italian Style
    1. Mix ground chicken, mozzarella cheese, salt and pepper and form into small meatballs.
    2. Mix panko, oregano and garlic powder.
    3. Dredge meatballs in flour then eggs and finally coat in panko mix. Repeat once more.
    4. Fry in 325F oil. Serve with marinara sauce.

    Hot Nashville Style
    1. Mix ground chicken with salt and pepper and form into small meatballs.
    2. In a small saucepan, heat up canola oil, cayenne pepper, paprika, cumin, light brown sugar and garlic granules. Set aside.
    3. Combine buttermilk, eggs and tabasco.
    4. Dredge meatballs into the flour, then buttermilk mix and flour again.
    5. Fry in 350F oil. Drizzle spicy oil on the fried meatballs and serve with pickles.
