Hawaiian Chicken BLT Sandwich
  • INGREDIENTS
    Chicken Marinade
    2 pounds boneless skinless chicken tenders
    1 cup unsweetened pineapple juice
    ½ cup soy sauce
    ½ cup brown sugar
    ⅓ cup ketchup
    ¼ cup chicken broth
    2 teaspoons fresh ginger root, grated
    1½ teaspoons minced garlic

    Other Ingredients
    Sourdough Baguette
    Romaine Lettuce
    1 fresh tomato
    1 Avocado
    Mayonnaise
    Siracha
    Thick Cut Applewood Bacon

    INSTRUCTIONS
    1. In a medium sized bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger and garlic.
    2. Reserve 1 cup sauce for basting.
    3. Add the chicken tenders and sauce to a plastic bag and marinate at least 2 hours or overnight.
    4. Grill chicken (or pan sear in skillet), covered, over medium heat for 6-8 minutes on each side or until no longer pink. Baste occasionally with reserved marinade during the last 5 minutes.
    5. Fry or bake bacon until crispy
    6. Wash and cut fresh lettuce
    7. Slice tomatoes and avocado
    8. Mix together siracha and mayonnaise in a small bowl.
    9. Slice sourdough baguette in half and lightly toast
    10. Spread a thin layer of spicy mayo mixture on bread
    11. Build sandwich. Place chicken, bacon, avocado, lettuce, tomato, on bread
    12. Cut in half and enjoy
