Chicken Tikka Masala
    2 boneless, skinless chicken breast; sliced
    1 Tablespoon turmeric. split
    2 Tablespoons garam masala, split
    1 teaspoon ground coriander
    1 teaspoon cumin
    3 pods cardamom, crushed
    3 cloves garlic
    1 teaspoon grated ginger
    1/4 teaspoon cayenne pepper
    1 Tablespoon salt black pepper
    3 Tablespoon ghee (or coconut oil)
    1 14 -oz can strained tomato
    1 can coconut milk, split basmati rice to serve
    Cilantro, garnish
    1. In a bowl, mix chicken with half turmeric, garam masala, salt and pepper, and 1/4 cup coconut milk
    2. Using a mortar and pestle, grind garlic and salt into a paste
    3. In a skillet, melt the ghee and add garlic, garam masala, coriander, cumin, cardamom, ginger, cayenne
    4. Sauté chicken
    5. Add tomato and simmer
    6. Add remaining coconut milk
    7. Serve over rice and garnish with cilantro
