Avocado Pesto
    16oz box spaghetti
    3 cloves garlic
    2 ripe avocados
    ½ cup fresh basil
    ¼ cup olive oil
    Juice of one lemon
    For serving/garnish:
    Shaved parmesan
    Lemon zest
    Black pepper, cracked
    1. Cook pasta al dente according to package instructions.
    2. Add garlic cloves to a food processor and pulse until minced.
    3. Add avocado, basil, olive oil, lemon juice, salt and pepper and pulse until smooth.
    4. Add 1-2 tablespoons of water if needed to thin out the sauce.
    5. Toss pasta with sauce and top with shaved parmesan, lemon zest and black pepper.
