Arroz Con Gandules
  • INGREDIENTS
    Adobo seasoning (can purchase or make your own: sweet paprika, black pepper, onion powder, garlic powder, Mexican oregano, cumin, chile powder -chipotle or ancho)
    1/4 cup, divided Sazon seasoning (or can make your own: coriander, cumin, annatto (achiote), turmeric, garlic powder, salt, oregano, pepper)
    2 x thin sliced pork chops
    2 cups boiled rice
    3 cups water
    Gandules (pigeon peas or black eyed peas), drained and rinsed
    Sofrito: onion, green bell pepper, garlic, cilantro – mixed in a food processor
    1 Tablespoon chicken buillion
    1 bay leaf
          
    INSTRUCTIONS
    TO MAKE THE ARROZ CON GANDULES:
    1. Make the sofrito
    2. Heat oil in pot
    3. Add sofrito and cook for about 4 minutes
    4. Add 2 Tablespoons sazon and chicken buillion, bay leaf and water until boiling
    5. Lower water to a simmer and add beans
    6. Add rice and let simmer, uncovered until the liquid is evaporated
     
    TO MAKE THE CHULETAS
    1. Mix seasonings: adobo, sazon
    2. Heat oil in a pan
    3. In a shallow dish, coat both sides of the pork chops
    4. Sear the pork chops 1-2 minutes each side
    5. Lower heat to medium and cook 2-3 minute more on each side
