Vegan Jackfruit Nachos
    1 Can of Jackfruit
    1 Bottle/Can of your favorite Enchilada sauce (let's use TJ's Enchilada Sauce)
    Bag of Tortilla Chips
    1 Cup Vegan Shredded Cheese
    3/4 Cup Drained Black Beans
    ½ Your Favorite Salsa
    Sliced Green Onion Garnish

    1. Drain Jackfruit from can, place in sauce pan, add jar of enchilada sauce.
    2. Bring to a boil then simmer for 20 Minutes, then shred with 2 forks.
    3. Pre-Heat Toaster Oven to 400 degrees
    4. Place Corn Chips on Cookie Sheet
    5. Top the Corn Chips with shredded Jackfruit mixture, 3/4 Cup drained Black Beans, 1 Cup Vegan Shredded Cheese
    6. Bake 7 minutes – or until Cheese is melted.
    7. Take out of oven - top with salsa
    8. Garnish with Sliced Scallions
