INGREDIENTS 8 ounces dry pasta 5 cups water 4 cups cauliflower, chopped 2 tablespoons olive oil 4 cloves garlic ½ cup unsweetened almond milk ¼ cup nutritional yeast 1 teaspoon onion powder Juice of one lemon Salt and pepper to taste Fresh parsley for serving
INSTRUCTIONS 1. Cook the pasta al dente according to package directions. 2. Bring the water to a boil in a large pot, add the cauliflower and cover. Cook for 7-10 minutes or until tender. 3. Drain the cauliflower and transfer to a blender. 4. Add the olive oil, garlic, almond milk, nutritional yeast, onion powder, lemon juice, salt and pepper and blend until smooth. 5. Toss the cooked pasta with the sauce and serve with fresh parsley.
