Vegan Breakfast Burrito Prep
  • INGREDIENTS
    2 blocks medium firm tofu
    6 Tbsp Nutritional yeast
    1/4 C water
    2 tsp Turmeric
    1 tsp Paprika
    2 tsp Garlic Powder
    2 tsp Onion Powder
    2 cups Hash Browns
    2 Veggie sausages
    1 Red pepper
    ¼ Purple onion
    ½ tsp Black pepper
    ½ tsp Salt
    4 meal prep containers
     
    INSTRUCTIONS
    1. Break up Tofu blocks into large pieces with hands. Mix in nutritional yeast, turmeric, paprika, garlic powder, onion powder and water.
    2. Place mixture in a pan, and cook over medium heat. Flip to cook evenly being careful not to break apart the pieces too small. The tofu scramble with shrink down slightly as the water cooks out.
    3. Add salt and pepper to the tofu scramble and divide into 4 meal prep containers
    4. Fry up the hash browns until golden brown, and divide into the 4 containers.
    5. Sauté the pepper and onions and place equal portions into each container.
    6. Chop up the veggie sausage and fly until the edges are crisp and brown. Divide and place into the containers.
    7. Place the containers in the fridge ready to go for the week. In the morning, breakfast is ready to go by placing all the contents of a container into a large tortilla. Add a bit of your favorite salsa and wrap that burrito up!
