Vegan Beet Pesto
  • INGREDIENTS
    1.5 cups Pre-cooked beets
    2 tablespoons Olive oil
    1/4 cup Pumpkin seeds
    1/4 cup Basil leaves
    3 cloves Garlic
    1/2 Lemons
    1 Tablespoon Nutritional Yeast
    1 box Spaghetti
    Salt and pepper, to taste

    INSTRUCTIONS
    Makes 4 dishes!
    1. Boil 1 box spaghetti in pan of salted water.
    2. Add into the food processor: 1.5 cups of Beets, 1 tablespoon nutritional yeast, 1/4 cup pumpkin seeds, 1/4 cup basil, 3 cloves of garlic, 2 tablespoons lemon juice. Start the processor.
    3. Add 1 tablespoons olive oil mid-way.
    4. Stop when it's a thick consistency.
    5. Add the pesto sauce to your cooked pasta, garnish with extra basil leaves, and enjoy!
