Strawberry Kiwi Icebox Cake
    1 ½ cups heavy whipping cream
    2 tbsp powdered sugar
    ½ tsp vanilla extract
    1 box of graham cracker cookies
    1 lb of fresh strawberries, sliced
    1 lb of fresh kiwis, sliced

    1. In a large mixing bowl, combine the heavy whipping cream, sugar and vanilla extract.
    2. Whisk together with an electric hand mixer until you stiff peaks form. Do not overmix!
    3. In a 8 in x 8 in cake pan, spread a thin layer of whipped cream on the bottom. Assemble graham crackers on top of cream, then spread another layer of whipped cream, then fresh fruit.
    4. Repeat until you've filled the entire baking pan.
    5. Chill for at least 2 hours before serving.
