Mini Peach Shortcake
    Cooking spray, for pan
    2 cups – Approx 4-6 fresh peaches, sliced
    1/8 cup white sugar
    1 1/2 cups Original Bisquick mix
    1/4 cup milk
    2 tablespoons sugar
    3 tablespoons butter or margarine, melted
    ½ cup Cool Whip
    2 tablespoon Brown Sugar
    ½ tsp Vanilla Extract
    ½ tsp Cinnamon
    1. Cut fresh peaches in half and pit. Slice peaches until you have 2 cups.
    2. In pot melt 1 tablespoon of butter. Pour in 2 tablespoons of brown sugar, vanilla extract, and cinnamon.  
    3. Mix in peaches and 1/8 cup white sugar; and simmer on low heat until peaches are carmalized.
    4. In medium bowl, stir Bisquick mix, milk, 2 tablespoons sugar and 2 tablespoons of butter until soft dough forms. On ungreased cookie sheet, drop dough by 4 spoonfuls.
    5. Bake in oven at 425°F for approx. 10 to 12 minutes or until golden brown.
    6. Split warm shortcakes; fill and top with carmalized peaches and cool whip.
