Fresh Summer Avocado Bean Salad
  • INGREDIENTS
    1/2 Cup Greek Yogurt
    1 Can Garbanzo Beans
    1 Can of Red Kidney Beans
    2 Avocados
    1 Lime
    1 large Tomato
    1/3 Cup Fresh Cilantro
    1/3 Cup Fresh Parsley
    Half a Red Onion
    1/4 teaspoon Cumin Powder
    1 teaspoon Garlic Powder
    1 teaspoon salt
    1tbs Rice Vinegar
     
    INSTRUCTIONS
    1. Open can of beans (1 can of Red Kidney Beans, 1 can of Garbanzo beans)
    2. Drain beans and rinse in colander
    3. Pour beans into mixing bowl and sit to the side
    4. Peel & chop avocados – 2 Avocados
    5. Chop tomatoes – 1 tomato
    6. Chop red onions – ½ of Onion
    7. Chop Fresh Cilantro – 1/3 Cup
    8. Chop Fresh Parsley – 1/3 Cup
    9. Mix chopped ingredients into bowl of beans
    10.  Pour Rice vinegar over mixture – 1 tbs
    11.  Cut and Squeeze Lime over mixture – 1 Lime
    12.  Add Greek yogurt – ½ Cup
    13.  Add Spices ½ tbs Cumin powder, ½ tbs Salt, & ½ tbs Garlic powder
    14.  Mix all ingredients together in bowl with a spoon
    15.  Eat now or cover and chill in fridge for at least an hour (Tastes better the longer it sets in fridge)
