Two similarly shaped sweet potatoes (yams) ⅔ cup Chickpeas ½ tsp Garam Masala Powder ¼ tsp Turmeric ¼ tsp Salt 1/8 cup Green onion 1 Tbsp. Tehini ½ Lemon ½ Avocado
INSTRUCTIONS Mac and Cheese 1. In a mug, pour in a macaroni noodles and water. Add a pinch of salt and microwave for 2-3 minutes or until fully cooked. 2. Add milk and cheese. Stir together. 3. Microwave for another 30 seconds. Stir again and add some green onion to complete your meal!
Pita Pizza 1. On a pita bread, spread tomato sauce over the surface, and add shredded mozzarella, and any of your favorite toppings. 2. Microwave for 2 minutes. 3. Slice, eat, and repeat! ;)
Stir Fry 1. Place ½ cup rice on a bowl and cover with 1 cup water. Cover with a plate, and microwave for 7 minutes. 2. Add veggies, soy sauce, and sriracha. Mix to combine, and microwave for another 2 minutes. 3. Enjoy!
Brownie mug 1. Lightly oil the inside of a mug. 2. Combine ½ cup brownie mix with 3 Tbsp water. Add a small handful of chocolate chips 3. Microwave for 1:30 or until batter puffs and firms. 4. Top with a whipped cream spiral, and a few more chocolate chips for good measure.
Burrito Bowl 1. Place ½ cup rice in a microwave safe bowl, and cover with 1 cup water. Place a dish over top, and microwave 7 minutes. 2. Add black beans and corn. Microwave for another minute. 3. Add diced tomatoes, lettuce, olives, salsa and sour cream. 4. Enjoy!
Spaghetti and Meatballs 1. Break a one-inch round of spaghetti noodle in half, and cover them with about a cup of water in a microwave safe bowl. Microwave for 3 minutes or until cooked. 2. Pour tomato sauce over top, and add some frozen meatballs. Microwave again for 1:30. 3. Enjoy!
Loaded Potato Boats 1. Slice a sweet potato lengthwise, and microwave for 7 minutes. 2. Mash the insides with a fork, and add ⅓ cup of chickpeas to each side. Add turmeric, garam masala, salt. Mix lightly with fork. Add a sprinkle of green onion, and microwave for another minute. 3. Drizzle tehini with a spoon, and squeeze a lemon over top. Add a few avocado wedges on top and voila! You've got yourself a hearty meal. (That's also lazy AF!)
