Chocolate Cream Cupcakes
  • INGREDIENTS
    1 cup chocolate cream cookies
    1 ½ cups all-purpose flour
    2 ½ teaspoon baking powder
    3 large eggs
    8 tablespoons unsalted butter
    ½ cup granulated sugar
    1 teaspoon salt
    ¾ cup milk
    1 teaspoon vanilla extract
    As Needed vanilla frosting
     
    INSTRUCTIONS
    1. Pre-heat oven to 350F.
    2. Place about 20 cookies in a large bag and crush into crumbles. Set aside.
    3. Combine flour, salt and baking powder into one bowl. Set aside.
    4. Cream butter and sugar until fluffy. Mix in eggs one at a time then mix in vanilla extract.
    5. Alternate combining flour mixture and milk. Mix until flour is incorporated.
    6. Fold in cookie crumbles. Place batter ¾ in a lined muffin tin.
    7. Bake for about 18-20 minutes. Top with frosting.
