Cauliflower Chicken Fried Rice
  • INGREDIENTS
    1 tablespoon olive oil
    1⁄2 medium onion, diced
    2 cloves garlic, minced
    1 boneless, skinless chicken breast; diced
    1 tablespoon sesame oil
    4 cups riced cauliflower
    3 carrots, diced
    1⁄2 cup frozen peas
    1 large egg
    1⁄4 cup soy sauce

    For serving:
    2 tablespoons sliced green onion
    1 tablespoon sesame seeds
    1-2 tablespoons Siracha

    INSTRUCTIONS
    1. Heat olive oil in a large skillet over medium heat
    2. Add onion and garlic, cook until soft and translucent
    3. Add the chicken and cook until brown, 4-5 minutes
    4. Add sesame oil, cauliflower, peas, carrots and cook until tender
    5. Beat the egg, push rice mixture to one side of the pan and scramble the egg on the
    other side
    6. Stir everything together, add soy sauce and cook for 2-3 minutes more
    7. Serve with green onions, sesame seeds and Siracha
